Few days back I stumbled upon a contest at http://www.manjulaskitchen.com and with my new found craze for cooking I immediately decided to send an entry. So, here is my experiment ( that turned out quite nice in my opinion :P).
Ingredients:
- 3/4 cup corn kernels
- 1/2 cup shredded mozzarella cheese
- 1 table spoon dhaniya pudina chutney (click here for recipe)
- 2 green chilies chopped finely
- 1/4 tea spoon red chilly powder
- 7-8 bread slices
- 1 tea spoon corn flour
- Butter / oil for baking/ frying
- Salt to taste
- 1 cup water
- Take corn kernels in a bowl, add 1/2 cup water and microwave for 1 minute.
- Drain water properly. Now add cheese, chutney, green chilies, red chilly powder, corn flour and salt. Mix them properly. Here is how the mixture will look like.
- Now cut the sides of bread. Place a slice on a platform and sprinkle some water. Press the slice with your palm. The slice should get damp but not wet.
- Place 1 tablespoon of stuffing and roll up. Press the roll gently between your palms and make sure the sides are sealed.
- Proceed to bake/ deep fry the rolls.
- Preheat oven at 425ºF.
- Brush the rolls lightly with butter.
- Place the rolls on a baking tray lined with parchment paper or greased.
- Bake for 8 minutes at 425ºF.
- Now take out the tray and turn the rolls.
- Keep in at same temperature for another 10-12 minutes or till they get golden brown.
- Heat oil in a pan on high flame.
- Deep fry the rolls till they get golden brown.
Serve hot with tomato ketchup and enjoy! and don't forget to share your suggestions with me.
